Tiny Island, Giant Flavors: Providencia’s Rondón

In Providence Island, ori Isla de Providencia, a tiny Colombian island in the Caribbean, food from both land and sea are plentiful – but rondón is the local delicacy. Rondón is a traditional soup made from fish, pork, shellfish, plantain, sweet potato, coconut milk, spices, and much more, made over an outdoor fire and eaten communially. We seek a classic preparation from one of Provicencia’s expert rondón cooks and learn about the rich culture of music and community that centers this beloved island meal.
